There are so many vegetables they can be broken down into subcategories, these are Leafy and Salad Vegetables which include cabbage, celery, and spinach. Fruit Vegetables including tomatoes, squash, bell pepper, and pumpkin. Edible Flower Vegetables including broccoli, cauliflower, and artichoke. Podded Vegetables like green beans, peas, and chickpeas. Bulb and Stem Vegetables including onion, garlic, asparagus, and leek. Root and Tuberous Vegetables such as potato, carrots, and beetroot. Finally and less know is Sea Vegetables including nori, kombu, and wakame.
Vegetables are often combined together in dishes like salsa, ratatouille, succotash. They can be a highlight alone like cauliflower cheese, baked potatoes, or green bean casserole.
