Ingredients

Yogurt Dill Sauce

  • 1 small seedless cucumber
  • 1 cup yogurt
  • 1 teaspoon salt
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons minced fresh dill
  • 1 clove garlic

Pickling Brine

Purple Cabbage Preparation

  • 1 medium purple cabbage
  • 2 tablespoons vegetable oil
  • 1 sprig dill sliced

Yogurt Dill Sauce

  • Half the cucumber and remove the seeds then finely grate.
  • In a bowl combine the yogurt, salt, lemon juice, fresh dill, and garlic. Stir to combine well.
  • Stir through the grated cucumber then chill untill needed.

Pickling Brine

  • Boil the water then add the cider vinegar, sugar, garlic, red chili flakes, and all-purpose rub. Stir until dissolved and turn off the heat.

Purple Cabbage Preparation

  • Remove any damaged outer leaves of the purple cabbage then cut into 6 even wedges.
  • In a large bowl add the purple cabbage wedges then pour over the hot pickling brine. Let sit for at least 30 minutes. Remove and drain.
  • Preheat a grill to a hot temperature.
  • Brush a little vegetable oil on each segment then grill on the prepared hot grill until there is a little char on each surface.

To Serve

  • Place the cabbage wedge on a serving plate then spoon-drizzle the yogurt dill sauce on top. Garnish with additional fresh dill.
