Grilled purple cabbage served with yogurt dill sauce is a flavor-packed dish that brings out the best of the cabbage. When cabbage is grilling, the tightly packed leaves begin to open and char. This develops a sweetness while maintaining a satisfying crunch. The vivid purple color seems to deepen as it cooks, making it both visually appealing and delicious.
A small but influential step is using homemade warm pickling brine on the purple cabbage before grilling. It prepares the cabbage by softening it, adding flavor, and increasing moisture in the layers, which in turn helps steam it while cooking.
Whether you’re grilling outdoors or in the backyard, this recipe offers a fresh and modern approach to vegetables. It’s easy to prepare, beautiful to serve, and loaded with flavor and texture. The tangy yogurt dill sauce is the perfect complement to the bold flavor of the cabbage. Made with creamy yogurt, fresh dill, lemon juice, and garlic, it adds brightness and a cooling contrast to the warmth and richness of the grilled wedges.
