The bright color of the grilled purple cabbage contrasts with the stark white of the yogurt sauce with pops of green from the fresh dill creating an attention-seeking side dish star of any meal.
The purple cabbage has a two-step cooking process initially being placed in a hot homemade brine before being grilled over hot charcoal. These combine to add flavor with an earthy smokey undertone.
The dill and cucumber sauce is a great addition to turn it from simply good cabbage to a stand-alone side dish.
