Sauteing is related to frying but typically done at a slightly lower temperature and with more oil. This makes it a good choice for more delicate and small pieces of meat, fish, and seafood.
The saute process also often required more movement of the item around the pan or even tossing. A saute pan is curved in a way to help with the tossing motion.
The cooking process of sauteing still allows for browning but it is more golden and not like frying which creates a sear.
