Camping Skillet Chorizo Rice Recipe
Ingredients
- 1 pound fresh chorizo
- 1 small yellow onion finely diced
- 14 ounce can diced tomatoes
- 14 ounce can corn drained
- 3 cups cooked rice

- Heat a camping skillet over medium heat. Add the chorizo and cook, breaking it up with a wooden spoon or spatula, until cooked through, about 5 minutes.
- Stir in the onions and continue to cook until the onions are soft and translucent, takes about 5 minutes.
- Add the tomatoes, corn, and rice and cook until heated through, stirring continuously, takes about 5 minutes.
