Spinach Patties

  • 3 cups finely chopped spinach fresh or frozen
  • 1 small onion diced
  • 1 cup breadcrumbs

Directions

Spinach Patties

  • To a bowl, add the spinach, onion, breadcrumbs, cheese, eggs, butter, nutmeg, salt, and pepper.
  • Combine well, ensuring the ingredients are well distributed throughout the mixture.
  • Divide the mixture into even balls, then compress them to make patties.

To Cook

  • Preheat the skillet over a gas campstove or campfire.
  • Add the butter and olive oil to the preheated skillet.
  • When the butter has melted, add half the patties and cook until they are browned on both sides.
    Tip: Use a flip to turn the patties as they become quite soft partway through the cooking, when the cheese has melted and the moisture has come out of the spinach, but before the crisp brown crust has formed on both sides of the patty.
  • Once the first batch is cooked, cook the second batch. Serve immediately while still warm.
