Crumpet French Toast
These crumpets, cooked like French toast, are so much better than bread. The egg gets all the way into the holes and actually has a more eggy flavour because of it.
Crumpet French Toast is a little unusual, but highly recommended. A bit of cinnamon and sugar give it just a hint of sweetness, without being too sugary. Top with your favourite jam, jelly, or syrup when serving.
For some reason I always find that crumpets travel better than bread, so good for camping all round!
1/4 cup milk
3 tablespoons soft brown sugar
butter, for frying
1 tablespoon ground cinnamon
In a mixing bowl, beat the eggs until uniform. Add the milk and brown sugar, stirring well to combine.
Soak the crumpets in the egg mixture until they have absorbed most of it.
Heat a BBQ griddle, hot plate, or skillet to a medium high heat then lightly butter. Brown the crumpets on both sides, then sprinkle with cinnamon to serve.
