This Winter Salad uses Brussels Sprouts and Apples to create fresh flavors using seasonal produce of the cooler months, goes with your favorite grilled meat
Beets are one of the under utilized vegetables. This is a great winter salad that showcases this ingredient in a rich combination of tasty elements.
Feel free to cook the beets any way you wish, roasted, baked or even boiled beetroots, noting additional flavors can be added in some cooking methods such as garlic for additional flavors.
The salad can be eaten as a side, or topped with slices of your favorite grilled meats.
2 tablespoon olive oil
4 tablespoons red wine vinegar
4 serves baby arugula lettuce, or similar
1/4 cup diced walnuts
1/4 cup goats cheese
Prepare the beetroot as desired, this can be roasted, baked, or wrapped in foil and cooked in the coals.
Combine the olive oil, red wine vinegar and salt. Whisk to combine.
Dice or slice , to your preference, the beetroot, then add to the dressing.
In the serving dish, create a bed of the lettuce. Top with the beetroot and dressing. Sprinkle with the walnuts and goats cheese. Serve immediately.
