Watermelon Blueberry Salad Recipe
Ingredients
Blueberry Vinaigrette
- 1 cup fresh blueberries
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 1 tablespoon lemon juice
- pinch salt and pepper
- 1/2 cup olive oil
Watermelon and Blueberry Salad
- 4 cups arugula (rocket)
- 1/2 watermelon cubed
- 2 cups blueberries
- 8 ounces feta cheese, crumbled
Directions
Blueberry Vinaigrette
- In a blender combine the blueberries, vinegar, honey, lemon, salt, and pepper; puree until smooth.
- Emulsify the dressing by turning the blender on medium then slowly pouring in the oil. As it combines into the puree it emulsifiers and becomes creamy. This only will take about 30 seconds.
Watermelon and Blueberry Salad
- Layout 8 serving dishes and place in order the following: handful of arugula, 5ish cubes watermelon, 8ish blueberries, sprinkle with crumbled feta, then finally drizzle with the blueberry vinaigrette. Optionally you can change the serving to one large bowl with all the ingredients, or proportion out accordingly for more or fewer servings.
