Watermelon Blueberry Salad

This is a perfectly refreshing summer salad packed with healthy ingredients like fresh watermelon and blueberries. Even the dressing includes the blending of fresh blueberries.

The bright and contrasting colors of the salad make it a stand out as a pretty and gourmet style salad, although as easy as any other to make.

While traveling if you go to fresh farmer markets you may find alternative fruits that you can swap out to make variations. Possible fruit substitutions include raspberries, rockmelon, and strawberries.

Ingredients

Blueberry Vinaigrette

1 cup fresh blueberries

1/4 cup balsamic vinegar

2 tablespoons honey

1 tablespoon lemon juice

pinch salt and pepper

1/2 cup olive oil

Watermelon and Blueberry Salad

large bunch or arugula (rocket)

1/2 watermelon, cubed

1 large punnet blueberries

1 bock feta (8oz | 225g), crumbled

Recipe Directions

  1. In a blender combine blueberries, vinegar, honey, lemon, salt, and pepper, pureeing until smooth.

  2. Emulsify the dressing by turning the blender on medium then slowly pouring in the oil. As it combines into the pure it emulsifiers and becomes creamy. This only will take about 30 seconds.

  3. Layout 8 serving dishes and place in order the following, handful of arugula, 5ish cubes watermelon, 8ish blueberries, sprinkle with crumbled feta, then finally drizzle with the blueberry vinaigrette.
    Optionally you can change the serving to one large bowl with all the ingredients, or proportion out accordingly for more or less serves.
