Two Pot Beef Stroganoff

This simple two-pot dinner of beef stroganoff and pasta is ideal for a two-burner gas stove while camping.

The ingredients are all easy to take camping and self-contained (although a cooler is needed). The beef can be exchanged for other red meats that you may have available. Any pasta can be used.

Perfect for an outdoor dinner it can easily be cooked on a two-burner gas stove which is a common choice of many campers. Alternatively, it can also be easily prepared over a campfire or in Dutch ovens.

Ingredients

4 servings of pasta

1 dash oil

500g (1.1 pound) beef

1 medium brown onion, diced

2 cloves garlic, finely diced

300g (0.6pounds) button mushrooms, sliced

2 tablespoons cornflour (corn starch)

1 250g (8.8oz) sour cream

2 tablespoons tomato paste

1/2 cup beef stock (or broth)

Recipe Directions

  1. Put the pasta on and cook as per packet instructions.

  2. Slice the beef into thin bite-sized strips.

  3. Heat a pot then add the oil and beef and stir fry until brown on all sides.

  4. Add the diced onion and garlic and cook until transparent then add the sliced mushrooms and cook until soft.

  5. In a bowl combine the cornflour, sour cream, and tomato paste.

  6. Add the sour cream mix to the beef and onions then stir gently until it starts to simmer.

  7. Serve the beef stroganoff over the drained pasta.
