Thai Red Curry

A classic Indian dish loved by families, this easy meatball tikka marsala is a perfect dish for camping.
For quick and easy preparation there is a wide range of pre-prepared meatballs available or you can use leftovers from a batch you made or make a batch specifically for this recipe.
Unlike the cliche perception of curries, many are not hot, this recipe is an example of this, with it being spicy as in a wide range of spice flavors, yet no heat and a sweet undertone. Partners well with simple rice preparations and Indian flatbreads.
1 tablespoon peanut oil
24 meatballs
1/2 brown onion, diced
3 tablespoons tomato paste
3 cloves garlic, finely diced
1 tablespoon fresh ginger, finely diced
1 1/2 teaspoon garam masala
1 1/2 teaspoons chili powder
1 1/2 teaspoon turmeric
1 (15oz | 425g) can tomato sauce
1 chicken stock
1/2 cup heavy cream
2 tablespoons cilantro, to garnish

Prepare rice or rice dish as per instructions.
Heat oil in a large pot over medium heat. Add the meatballs and onion then cook until golden brown.
Stir in the tomato paste, garlic, ginger, garam masala, chili powder, and turmeric until fragrant; about a minute.
Stir in the tomato sauce and chicken stock. Bring to a boil then reduce to a simmer for 10 minutes stirring occasionally.
Stir in the heavy cream until heated through; about a minute.
Serve with the rice preparation of your choice.
