Easy Meatball Tikka Masala

Ingredients

  • 1 tablespoon peanut oil
  • 48 meatballs
  • 1/2 yellow onion diced
  • 3 tablespoons tomato paste
  • 3 cloves garlic minced
  • 1 tablespoon minced fresh ginger
  • 1 1/2 teaspoons garam masala
  • 1 1/2 teaspoons chili powder
  • 1 1/2 teaspoons turmeric
  • 1 can tomato sauce
  • 1 cup chicken stock
  • 1/2 cup heavy cream
  • 2 tablespoons cilantro leaves to garnish

Directions

  • Heat the oil in a large pot over medium heat. Add the meatballs and onions then cook until golden brown.
  • Stir in the tomato paste, garlic, ginger, garam masala, chili powder, and turmeric until fragrant, about 1 minute.
  • Stir in the tomato sauce and chicken stock. Bring to a boil then reduce to a simmer for 10 minutes, stirring occasionally.
  • Stir in the heavy cream until heated through, about 1 minute. 
  • Serve with the rice preparation of your choice.
