Raspberry Chipotle Pork Chops

Ingredients

  • 1 teaspoon Texas style steak rub
  • 4 pork chops 1 inch thick
  • 3 green apples
  • 2 cups raspberries
  • 1 cup white wine
  • 8 oz raspberry and chipotle sauce

Directions

  • Apply the Texas-style steak rub onto the pork chops.
  • Peel, core, and slice the apples, then saute them in a small pan with the raspberries and white wine to create a sweet sauce.
  • Place the chops on the grill rack of an Ultimate Dutch Oven, with smoke chips in the base. Cook at 375 degrees F (190 degrees C) until they reach an internal temperature of 140 degrees F (60 degrees C).
  • Glaze the chops with the raspberry and chipotle sauce then cook for an additional 5 minutes.
  • Let the cooked chops rest for 5 minutes, then serve topped with the apple and raspberry wine sauce.
