This recipe has all the traditional components of a shepherd’s pie: minced meat, onions, gravy, and of course, mashed potatoes. While you take a few moments to cook the meat and let it simmer, the gravy and potatoes are prepared from mixes, saving you a lot of time and effort. The final dish is just as delicious as the original, much more complicated, version.
Play around with the different types of cheese folded into the instant mashed potatoes. To make the potatoes a little fancier, you can fold in fresh chopped chives or parsley.
Dutch Oven Shepherd’s Pie Recipe
Ingredients
Lamb Stew
- oil as needed
- 2 pounds diced lamb
- 1 yellow onion diced
- 1/2 cup red wine
- water as needed
- 3 carrots sliced
- 1 cup peas
Cheesy Mashed Potatoes
- 2 cups instant potato
- 2 cups grated cheddar cheese
- boiling water as needed
- dash cream optional
To Assemble
- 1 cup water
- 1 tablespoon gravy base
- 2 tablespoons cornflour cornstarch
- 1/2 cup grated Parmesan cheese
- herb rub to taste
Equipment
- Aquaforno Cooking Unit or barbecue
- Dutch oven
Directions
Lamb Stew
- Preheat the Dutch oven with a splash of oil, then add the diced lamb.
- When the lamb is browned on the outside add the diced onion. Cook the lamb until transparent and starting to brown. Add the red wine to deglaze, then add water until the meat is covered.
- Add the sliced carrots and peas to the lamb mixture. Place the lid on the Dutch oven and leave to simmer.
Cheesy Mashed Potatoes
- In a heat-proof bowl add the instant potatoes and grated cheddar cheese.
- Add boiling water directly onto the cheese. Stir together the instant potatoes, cheese, and hot water until smooth. If desired bring it to a creamy consistency by adding a dash of cream.
To Assemble
- In a small bowl, combine the 1 cup water, gravy base, cornflour, and a pinch of herb rub until smooth.
- Pour the gravy mixture into the Dutch oven and stir to coat the meat and vegetables. Dollop the cheesy mashed potatoes on top and cover. Cook until warmed through.
