Traditionally, derby pie is made with chocolate and walnuts. However, pecans are also very tasty in this sweet treat.

This pie comes together super quickly, especially if you use a store-bought pie shell. You can also use a homemade pie shell, with your favorite recipe.

Ingredients

1 cup sugar

1/2 cup all-purpose flour

2 eggs, lightly beaten

1/2 cup unsalted butter

1 teaspoon vanilla extract

1 (6-ounce) package chocolate chips

1 cup nuts (optional)

1 ounce bourbon (optional)

1 unbaked pie shell

Recipe Directions

  1. Preheat the oven to 325 degrees F (160 degrees C).

  2. Mix together the sugar and flour. Using a mixer, add the eggs, butter, and vanilla, mixing well.

  3. Stir in the chocolate chips, nuts, and bourbon. Pour the batter into the pie shell.

  4. Bake for 1 hour. Let rest before serving.
