The tortillas replace the traditional pasta used in lasagna, in line with the Mexican theme. You may use any style of tortillas when making this. The use of corn tortillas will make it gluten-free.
Although this recipe uses a scratch-made taco-style beef layer, you could also use leftover chili for additional flavor. When serving, consider accompanying the dish with a salad to lighten the meal. Try using traditional Mexican sides like guacamole, sour cream, and pico de gallo.
Dutch Oven Tortilla Lasagna Recipe
Ingredients
Taco Ground Beef
- 4 pounds ground beef
- 4 tablespoons Mexican seasoning
- 1 yellow onion finely diced
- 2 cloves garlic crushed
To Assemble
- 6 tortillas
- 3 cups salsa
- 4 cups shredded Mexican Cheese

Directions
Taco Ground Beef
- In a pot add the ground beef and Mexican seasoning. Stir while cooking until brown.
- Add the diced onions and the crushed garlic. Continue cooking until the onions are transparent. Put aside until needed.
To Assemble
- Start to assemble the layers of the lasagna in the Dutch oven. Start the base with a tortilla, a third of the taco beef, one cup of cheese, a tortilla, then a cup of salsa. Repeat the pattern 3 times.
- Having finished three complete layers top with the last cup of cheese.
- Set the Dutch oven to cook at 350 degrees F (180 degrees C). This is done with 8 charcoal briquets on the bottom and 17 on the top.
- Cook for 45 minutes, this is typically the burn time of one set of charcoal briquettes. As all the ingredients are cooked the main goal is to heat it through and melt the cheese.
- Let sit for 10 minutes after cooking to set slightly before removing from the Dutch oven and slicing to serve.Tip: Do not slice in the Dutch oven as it is possible to damage the seasoning.
