
Potato and Bacon Soup

A simple quick cook camp noodle soup this is a wonderful addition to any camp meal.
Packed with flavor with the addition of a few additional ingredients including fresh garlic and ginger. If available cilantro (coriander) is another good addition.
The light weight nature of the ingredients make it an option for those starting to lightweight camp or trek, however consider a high protein main course to balance out the nutritional value of the whole meal.
1 carton (1 liter, 32 fl oz) chicken stock or broth; or water and equivalent powdered stock
1/2 inch ginger, finely diced
2 cloves garlic, finely diced
1 teaspoon chili flakes, or to taste
1 packet ramen noodles
1 sprig coriander (cilantro) to garnish

In a small pot over high heat, place the stock, ginger, garlic and chili on to boil.
When boiling, add the noodles and boil for 3 minutes until soft.
Serve in two bowls then garnish with fresh coriander.
