Grilled Bacon-Wrapped Potatoes

Potatoes are boring no more! Wrapped in bacon and then sprinkled with pork rub, they are so good you might have to make a double batch.

When picking the potatoes think small enough to cook through on a grill. Also, consider getting new potatoes you don’t need to worry about peeling them. If you can only get larger potatoes consider pre-boiling before placing them on the grill.

You can serve these potatoes alongside your favorite meals from the grill, such as chicken, steak, fish, or hamburgers as a side dish. They can also be served as finger food or an appetizer.

Ingredients

  • oil, for the grill
  • 15 small new potatoes
  • 5 slices bacon, cut into thirds
  • 1 tablespoon of your favorite pork rub

Equipment

  • pecan BBQ grill wood
  • 15 wooden toothpicks, soaked in water

Directions

  • Light the grill wood and let it burn until glowing hot. Lightly oil the grate.
  • Wrap each potato with a piece of bacon and secure with a toothpick. If you are worried that you potatoes are too big and won’t cook through, partly cook first before wrapping with the bacon
  • Sprinkle the rub evenly all over the bacon-wrapped potatoes. 
  • Place the bacon-wrapped potatoes on the grill. Turn the potatoes with tongs several times to allow the bacon to cook on all sides. The potatoes will be done in 20 to 25 minutes, or when the bacon is nice and crisp.
