Popular in ‘the South’ of America these atomic buffalo turds are a niche finger food cooked on a smoker. Though the name sounds less than desirable, these are actually incredibly delicious. Jalapeno peppers are stuffed with cream cheese and pulled pork, then wrapped in bacon and smoked.
Interestingly they include no buffalo and aren’t really that atomic on the hot food scale. Although this can be rectified with the selection of peppers used and how much pith and seeds are left in when preparing. You can also use a spicy rub if you like.
Variations can incorporate a mixture of both cream cheese and pimento cheese spread or use just one of them. You might replace the pork with smoked beef brisket or most any tender piece of smoked meat. Every time you try a different rub or sauce, you’re creating yet a new variation. Go for it!
Atomic Buffalo Turds (Poppers) Recipe
Ingredients
- 8 jalapeno peppers
- 8 ounces cream cheese
- 2 cups pulled pork
- 1 tablespoon sweet chili sauce as desired
- 16 strips bacon
- favorite BBQ rub to taste
Equipment
- baking tray
- toothpicks optional
Directions
- Preheat the smoker to 250 degrees F (120 degrees C).
- Cut the jalapenos in half and remove the seeds and white pith. It is optional if you remove the stalk or not.
- Spoon in ½ ounce of cream cheese into each jalapeno half then top with the pulled pork and sweet chili sauce.
- Wrap the whole stuffed jalapeno in a strip of bacon. Depending on the bacon used it may be necessary to use a toothpick to secure it in place. Sprinkle with the BBQ rub.
- On a tray or grill rack, place the atomic buffalo turds into the preheated smoker. Cook for 2 hours. Alternately, they can be cooked in a camp oven at 350 degrees F (180 degrees C) for 45 minutes.
- The atomic buffalo turds are cooked when the bacon is done and the jalapeno is tender.
