Atomic Buffalo Turds (Poppers)

Popular in ‘the south’ of America these atomic buffalo turds are a niche finger food cooked on a smoker.

Interestingly they include no buffalo and aren’t really that atomic on the hot food scale, although this can be rectified with the selection of pepper used and how much pith and seeds are left in when preparing.

Variations can incorporate a mixture of both cream cheese and pimento cheese spread or use just one of them. You might replace the pork with smoked beef brisket or most any tender pieces of smoked meats.  Every time you try a different rub or sauce, you’re creating yet a new variation. Go for it!

Ingredients

8 jalapenos

8oz (225g) cream cheese

2 cup pulled pork

sweet chili sauce, as desired

16 strips of bacon

favorite BBQ rub

toothpicks, optional

Recipe Directions

  1. Preheat the smoker to 250 degrees F (120 degrees C).

  2. Cut the jalapenos in half and remove the seeds and white pith. It is optional if you remove the stalk or not.

  3. Spoon in 1/2 oz of cream cheese into each jalapeno half then top with pulled pork and sweet chili sauce.

  4. Wrap the whole stuffed jalapeno in a strip of bacon, depending on the bacon used it may be necessary to use a toothpick to secure it in place. Sprinkle with the BBQ rub.

  5. On a tray or grill rack, place the atomic buffalo turds into the preheated smoker. Cook for 2 hours.

    Alternately: They can be cooked in a camp oven at 355 degrees F (180 degrees C) for 45 minutes.

  6. The atomic buffalo turds are cooked when the bacon is done and the jalapeno is tender.
