Two-Pot Beef Stroganoff

This simple two-pot dinner of beef stroganoff and pasta is ideal for a two-burner gas stove while camping. Traditional flavors of beef, mushrooms, and sour cream top cooked pasta. It makes for a hearty and warming meal on a cool evening. 

The ingredients are all easy to take camping and self-contained (although a cooler is needed). The beef can be exchanged for other red meats that you may have available. Any pasta can be used; use different fun shapes to mix it up a bit.

Perfect for an outdoor dinner it can easily be cooked on a two-burner gas stove. This is a common choice of many campers, because of how easy it is to use. Alternatively, it can also be easily prepared over a campfire in two Dutch ovens.

Ingredients

  • 8 ounces dried pasta
  • 1 dash oil
  • 1 pound sliced beef
  • 1 yellow onion diced
  • 2 cloves garlic minced
  • 1/2 pound button mushrooms sliced
  • 1/2 cup beef stock or broth
  • 8 ounces sour cream
  • 2 tablespoons tomato paste
  • 2 tablespoons corn starch (cornflour)

Equipment

  • 2 pots
  • gas stove

Directions

  • Cook the pasta per packet instructions.
  • Slice the beef into thin bite-sized strips.
  • Heat the oil in a pot over medium-high heat. Add the beef and stir-fry until brown on all sides.
  • Add the diced onions and garlic and cook until transparent, about 5 minutes. Add the sliced mushrooms and cook until soft.
  • In a bowl combine the stock, sour cream, tomato paste, and cornstarch.
  • Add the sour cream mixture to the beef and onions then stir gently until it starts to simmer.
  • Serve the beef stroganoff over the cooked and drained pasta.
