Smoked Sweet Chili Chicken Wings
We all love a good chicken wing and this is one of the best – a first place wining one at a BBQ competition in fact!
There is a bit of time but it is well worth it. Initially the wings are smoked, then sauced and grilled to finish, creating the smoky sweet flavor.
How hot they are is up to you, sweet chili sauce is typically pretty mind to most but it can easily be arched up with some hot sauce or sambal oelek.
2 pounds chicken wings
herb rub, to taste
Sweet Chili Sauce, to taste
hot sauce or sambal oelek, to taste
Cut the full wing into sections if desired. Lightly season the chicken wings with the herb rub.
In a disposable pan melt the butter then add the chicken wings in a single layer.
Place the chicken wings in a smoker set to 220 degrees F (105 degrees C) and cook for one hour, turning half way through.
After removing the chicken wings from the smoker transfer them to a bowl and drizzle with the sweet chili sauce and any additional sauce for heat if desired. Mix well until all the chicken wings are well coated.
Place on heated GrillGrates set to a moderate hot temperature then cook until grill marks form and the sauce sets, then turn to do the same on the other side. If you prefer a thicker glaze this step can be repeated.
