Flamin Hot Chicken Wings

These Flamin’ Hot Chicken Wings bring fiery heat and bold barbecue flavor together in one crave-worthy bite. Coated in barbecue inspired seasonings and grilled to perfection, the wings are then tossed in a homemade sticky-sweet spicy sauce. Resulting in a mouthwatering balance of sweet, smoky, and seriously spicy wings.

Cooking these wings in a kettle grill using the fried-not-fried method replicated the characteristics found in an air fryer. The high heat circulates the dry air around the barbecue, creating a deep fryer effect without the oil or, in the case of a barbecue, the grill marks. The result is a healthy option with a subtle smokey flavor only possible from a barbecue.

The recipe leaves room to tweak to your personal flavor or heat level, as both the seasoning and sauce are homemade. These, of course, can be swapped out for your favorite commercial products. Spicy Seasoned Chicken Wings

  • 2 pounds chicken wings butchered to drummies and flats
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon chili flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon finely cracked black pepper
  • 1 teaspoon cayenne pepper

Hot Wing Sauce

  • 1/4 cup hot sauce
  • 2 tablespoons honey
  • 1 teaspoon cayenne pepper
  • 2 tablespoons unsalted butter
  • ½ teaspoon Tabasco sauce

Directions

Spicy Seasoned Chicken Wings

  • Prepare the chicken wings by patting them dry with paper towel to remove as much moisture as possible. Then place in a bowl.
  • Add to the bowl the baking powder, garlic powder, chili flakes, salt, black pepper, and cayenne pepper.
  • Combine until the chicken wings are evenly coated. Place in the fridge until the grill is ready to cook on.

Hot Wing Sauce

  • In a bowl, combine the hot sauce, honey, cayenne pepper, butter, and Tabasco sauce. Combine well.

To Cook

  • Prepare the kettle BBQ to 465 degrees F (240 degrees C) with a kettle cone in the center filled with the charcoal.
  • Position the chicken wings around the edge of the kettle BBQ in the indirect heat and leave for 45 minutes, rotating the lid every 15 minutes to maintain an even heat.
  • Remove the wings to the bowl with the hot wing sauce and toss until well covered.
  • Return the chicken wings to the grill and cook for an additional 5 minutes to let the sauce set on them.
  • Remove the chicken wings and serve.
