Another favorite thing about this recipe for camping is that if you buy the bacon in a vacuum sealed package, all the ingredients travel really well, with measurements equal to their sold sealed volume.
Potato and Bacon Soup Recipe
Ingredients
- 20 oz bacon diced
- 1 onion diced
- 1/2 cup white wine
- 4 potatoes peeled and diced
- 4 cups chicken stock
- 1 can creamed corn
Directions
- In the pot or Dutch oven, fry the bacon until cooked and starting to crisp. Remove about a quarter to garnish.
- Add the onions and lightly fry in the bacon fat.
- Add the wine to remove any bits that may be sticking to the bottom of the pot or Dutch oven.
- Add the potatoes and chicken stock to the bacon and onions, then simmer until the potatoes are cooked through and start to fall apart.
- Using a potato masher, puree the potato soup as much as possible.
- Add the creamed corn then bring back to a boil to heat through.
- Serve garnished with the reserved bacon.
