Ingredients

  • 20 oz bacon diced
  • 1 onion diced
  • 1/2 cup white wine
  • 4 potatoes peeled and diced
  • 4 cups chicken stock
  • 1 can creamed corn

Directions

  • In the pot or Dutch oven, fry the bacon until cooked and starting to crisp. Remove about a quarter to garnish.
  • Add the onions and lightly fry in the bacon fat.
  • Add the wine to remove any bits that may be sticking to the bottom of the pot or Dutch oven.
  • Add the potatoes and chicken stock to the bacon and onions, then simmer until the potatoes are cooked through and start to fall apart.
  • Using a potato masher, puree the potato soup as much as possible.
  • Add the creamed corn then bring back to a boil to heat through.
  • Serve garnished with the reserved bacon.
