Potato and Bacon Soup

It is simple to prepare, but has a lot of flavor. And, it’s perfect for chilly nights around the campfire.
Another favorite thing about this recipe for camping is, if you buy the bacon in a vacuum sealed package, all the ingredients travel really well, with measurements equal to their sold sealed volume.
600g bacon, diced
1 onion, diced
1/2 cup white wine
4 potatoes, peeled and diced
1 litre chicken stock
1 tin creamed corn
In the pot or Dutch oven, fry the bacon until cooked and starting to crisp. Remove about a quarter to garnish.
Add the onions and lightly fry in the bacon fat. Add the wine to remove any bits that may be sticking on the bottom of the pot or Dutch oven.
Add the potatoes and chicken stock to the bacon and onions, then simmer until the potatoes are cooked through and starting to fall apart. Using a potato mashed, puree the potato soup as much as possible.
Add the creamed corn and bring back to a boil to heat through. Serve garnished with the reserved bacon.
