Smoked Salmon Quesadilla

Quesadilla’s are a great camping option, this is a simple yet elegant version using smoked salmon. Best bit it doesn’t need to be cooked, just to tortillas toasted, then assembled.

Perfect for that special outdoor romantic dinner, or simply to show off to your friends.

Although quite exotic, the salmon is sold in plastic sealed packages and travels well in the cooler. The other ingredients travel well also.

Ingredients

4 flour tortillas

100g cream cheese

100g smoked salmon

dill, to garnish

Equipment

griddle or skillet

Recipe Directions

  1. Heat the griddle to a medium hot temperature, then toast the tortillas until they slightly brown.

  2. Lay down two of the tortillas, spread with cream cheese.

  3. Divide the salmon evenly between the two tortillas. Additional salmon can be used if you are a fan of smoked salmon.

  4. Spread small sprigs of dill evenly across the salmon.

  5. Top with the second set of tortillas, then serve.
