Smoked Salmon Cucumber Bites
Perfect as a finger food appetizer at your next barbecue try these smoked salmon cucumber bites that are both easy yet have an air of sophistication.
This uses a cured style smoked salmon that you can make at home or easily buy in a plastic vacuum-sealed packages which makes it great for travelling in a cooler.
If in a rush there are now a range of pre-flavoured cream cheeses that you could use a substitute to making your own.
2 sprigs dill
1 8oz (225g) package cream cheese
1/2 pound (250g) smoked salmon
Slice the cucumber into thin rounds, about 32, and layout on a serving platter.
Finely chop the dill. Whip the cream cheese until smooth and light, then stir through the dill until evenly distributed.
Scoop or pipe about a teaspoon of the dill cream cheese mix onto each piece of cucumber.
Layout the smoked salmon and cut into 32 equal strips. Fold the smoked salmon 3 times then pierce in the center to hold together, then push straight down through the cream cheese into the cucumber to create the smoked salmon cucumber bite.
