This uses a cured-style smoked salmon that you can make at home. Or you can easily buy them in plastic vacuum-sealed packages, which makes them great for traveling in a cooler.
If in a rush there is now a range of pre-flavored cream cheeses that you could use as a substitute for making your own. Try smoked salmon, herb, or vegetable mixes.



Smoked Salmon Cucumber Bites Recipe
Ingredients
- 1 cucumber
- 2 sprigs dill
- 8 ounces cream cheese
- 8 ounces smoked salmon

- 32 toothpicks
Directions
- Slice the cucumber into thin rounds, about 32, and layout on a serving platter.
- Finely chop the dill. Whip the cream cheese until smooth and light, then stir through the dill until evenly distributed.
- Scoop or pipe about a teaspoon of the dill cream cheese mixture onto each piece of cucumber.
- Layout the smoked salmon and cut it into 32 equal strips. Fold the smoked salmon 3 times then pierce in the center with a toothpick to hold it together. Push straight down through the cream cheese into the cucumber to create the smoked salmon cucumber bite.
