Ingredients

  • 1 cucumber
  • 2 sprigs dill
  • 8 ounces cream cheese
  • 8 ounces smoked salmon

Equipment

  • 32 toothpicks

Directions

  • Slice the cucumber into thin rounds, about 32, and layout on a serving platter.
  • Finely chop the dill. Whip the cream cheese until smooth and light, then stir through the dill until evenly distributed.
  • Scoop or pipe about a teaspoon of the dill cream cheese mixture onto each piece of cucumber.
  • Layout the smoked salmon and cut it into 32 equal strips. Fold the smoked salmon 3 times then pierce in the center with a toothpick to hold it together. Push straight down through the cream cheese into the cucumber to create the smoked salmon cucumber bite.
