Perfect as a finger food appetizer at your next barbecue, try these smoked salmon cucumber bites. They are easy to make, yet have an air of sophistication. Crisp cucumbers are layered with smooth cream cheese and topped with smoky salmon.
This uses a cured-style smoked salmon that you can make at home. Or you can easily buy them in plastic vacuum-sealed packages, which makes them great for traveling in a cooler.
If in a rush there is now a range of pre-flavored cream cheeses that you could use as a substitute for making your own. Try smoked salmon, herb, or vegetable mixes.
