Chocolate Protein Microwave Pudding

Perfect while RVing or traveling for work this Chocolate Protein Microwave Pudding is a healthy dessert or snack.

Traditionally both microwave cakes and high protein cakes have a bad wrap due to their dry and dense texture. This recipe offers a lighter version of these two cakes that can easily be cooked in an RV or accommodation’s microwave.

High in protein it is a valuable contribution to your nutrition, adding fruit adds additional fiber, and accompanied with a yogurt adds more protein. Completely powder it stores for long periods of time until needed.

Ingredients

Chocolate Protein Mix

1 cup chocolate protein powder

6 tablespoons plain flour

6 tablespoons icing sugar (confectioners sugar)

3 tablespoons cocoa

1 tablespoons powdered egg substitute

1 1/2 teaspoons baking powder

To Serve

water, as needed

Addition such as chocolate chips or fruit

yogurt, cream, or ice cream, to serve, optional

Equipment

US measures (tablespoon 15ml teaspoon 5ml)

Recipe Directions

  1. In a bowl combine the chocolate protein powder, flour, sugar. cocoa, egg replacer, and baking powder. Combine well.

  2. Divide the powder out into individual serves in small containers or plastic bags. Each serve can be either 1/3 of a cup or 1/2 a cup.

  3. Mix the pre-made powder with water as below…

    Small Cup Serve: 1/3 cup of the mixture to 2 tablespoons water

    Large Bowl Serve: 1/2 cup of the mixture to 3 tablespoons water

  4. Drop in the wet mixture an addition such as chocolate or fruit. Dry additional like chocolate chips can be added prior to mixing in the water.

  5. Place in the microwave and cook for 1 minute. Serve hot topped with yogurt, cream, or ice cream.
