Prosciutto-Wrapped Scallops

Prosciutto-Wrapped Scallops are seasoned simply with salt, pepper, and garlic powder, then grilled for a crisp outside and tender center. These work perfectly as an appetizer, finger food, or a side dish to a seafood entrée.

Be careful not to overcook the scallops. They only need to cook for a few minutes on each side, otherwise, they will become tough and chewy. The prosciutto also cooks quickly, so it can be browned easily in the time it takes to cook the scallops.

The flavor profile can be tweaked by changing up the seasoning to a basic seafood rub, lemon pepper, or dill-based seasoning blend. A mild glaze can also be added but works better with something sweet rather than spicy.
