Crisp, tender, and golden brown, Fried Calamari Rings are an easy appetizer that everyone will love. Buttermilk helps to tenderize the squid, and seasoned flour gives it a great taste. The buttermilk also adds flavor and helps the flour mixture to stick to the squid.
You can use either fresh or frozen calamari for this recipe. Depending on your preference and what’s available, use just the rings, or the bodies and tentacles. Try to find squid that is already cleaned, to save yourself a lot of time and effort.
If you don’t have buttermilk, you can make your own. Mix one cup of whole milk with one tablespoon of lemon juice or white vinegar. Let it sit at room temperature for 10 to 15 minutes, then use it in the recipe.
Fried Calamari Rings Recipe
Ingredients
- 1 pound calamari rings
- 1 cup buttermilk
- vegetable oil for frying
- 1 1/2 cups all-purpose flour
- 2 teaspoons salt
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon fresh ground black pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder

Directions
- Combine the calamari and buttermilk in a large bowl, cover, and refrigerate for 30 to 50 minutes.
- Heat the oil in a large, deep pot or your deep fryer to 375 degrees F (190 degrees C).
- In a medium bowl, add the flour, salt, paprika, pepper, onion powder, and garlic powder. Whisk with a fork to combine.
- Working with one piece at a time, remove the calamari from the buttermilk and dredge in the flour. Repeat until all of the pieces are coated in flour.
- Add 8 to 10 pieces of the calamari to the hot oil and cook until golden brown, 2 to 3 minutes. Drain on paper towels. Repeat with the remaining calamari and serve immediately.
