Chocolate Protein Microwave Pudding

You prepare the base mix ahead of time, with simple ingredients, then package it for travel. When you are ready for a quick dessert or snack, you simply add water and microwave to cook.

Traditionally, both microwave cakes and high-protein cakes have a bad reputation. They tend to have a dry and dense texture. This recipe offers a lighter version of these two cakes that can easily be cooked in an RV’s or accommodation’s microwave.

High in protein, this snack is a valuable contribution to your nutrition. You can also add fresh or dried fruit for additional fiber. Served with yogurt adds more protein and calcium. The mix is made completely of powders, so store for long periods of time until needed.

Ingredients

Chocolate Protein Mix

  • 1 cup chocolate protein powder
  • 6 tablespoons all-purpose flour
  • 6 tablespoons confectioners' sugar (icing sugar)
  • 3 tablespoons sweetened cocoa powder
  • 1 tablespoon powdered egg substitute
  • 1 1/2 teaspoons baking powder

To Serve

  • water as needed
  • 6 chocolate chips or dried or fresh fruit
  • 2 tablespoons yogurt (cream or ice cream are other options)

Directions

Chocolate Protein Mix

  • In a bowl combine the chocolate protein powder, flour, sugar, cocoa, egg substitute, and baking powder. Combine well.
  • Divide the powder into individual servings then place in small containers or plastic bags. Each serving can be either ⅓ or ½ cup.

To Serve

  • Mix the pre-made powder with water as below:
    Small cup serving: ⅓ cup mixture to 2 tablespoons water
    Small bowl serving: ½ cup mixture to 3 tablespoons water
  • Drop into the wet mixture any additions, such as chocolate or dried or fresh fruit.
  • Place in the microwave and cook for 1 minute. Serve hot topped with yogurt, cream, or ice cream.
