Smoked Sausage and Black Bean Rice

A great one-pot meal while camping this Smoked Sausage and Black Bean Rice both looks and tastes amazing.

There is a wide range of smoked sausages available from homemade to vacuum-packed commercial to even dried smoked sausages that don’t require refrigeration making them ideal as a robust ingredient while outdoors.

Although beings easy to make the range of flavorsome ingredients combine to create a satisfying dish perfect after a hard day camping or enjoying the outdoors. It is also balanced with protein (meat and beans), vegetables, and rice making a healthy choice.

Ingredients

Boiled Rice

4 cups chicken stock or broth

1 tablespoon herb seasoning

1 1/2 cups rice

Smoked Sausage and Black Bean Rice

2 smoked sausages

1/2 cup diced brown onion

1/2 cup diced bell pepper

1/2 cup diced celery

2 cloves garlic, crushed

1 can black beans, drained

Recipe Directions

  1. Bring the chicken stock and herb seasoning to a boil.

  2. Add the rice and simmer for 10 minutes or until cooked through.

  3. Drain the rice in a sieve and put aside until needed.

  4. Slice the smoked sausages into thin rounds then add to the pot over moderate heat. Cook to brown and release the oils, if there are no oils in the sausage add a knob of butter or dash of oil.

  5. Add the onion, bell pepper, celery, and garlic to the sausage and cook until the onion is transparent.

  6. Stir in the cooked rice and drained black beans then cook until heated through, but not sticking or browning. Taste and adjust the flavors with salt, pepper, and/or herb seasoning. Serve hot.
