Duck is available now in many shopping centers and butchers making it no longer a bird enjoyed by only a few. Within the general category of duck, there are a few different types, each requiring slightly different considerations.
Farmed duck (which most people eat) has a planned diet and becomes very fatty. This is tasty yet also needs consideration to make sure much of it is rendered or it can be unpleasant.
Wild ducks there are a couple of common breeds worth noting. Mallard has earthy meat with less fat than a farmed version, slightly smaller than this are the teal and widgeon, the latter being less gamey in flavor.
Tufted ducks dive underwater to source their food, eating this way creates meat that can be muddy in flavor because of this.
