Directions
Honey Glaze
In a heatproof pot, add the BBQ sauce and butter, then heat until the butter has melted.
Add the honey and rub to the glaze, then stir to combine.
Spam Burnt Ends
Cut the spam into even cubes and place them in a disposable half pan.
Evenly coat the spam with the rubs.
Tip: You can use any rub or rubs you prefer, but be sure to use a low-salt rub as the spam is already very salty.
Lay out the spam burnt ends onto a grill tray.
To Cook
Heat the grill to 250 degrees F (120 degrees C). Add to chunks of cherry wood.
Place the tray of spam burnt ends into the preheated grill. Smoke for 1 hour, then remove.
Return the spam burnt ends to the disposable half pan, then drizzle with a third of the glaze and toss to ensure they are all covered on all sides.
Return the spam burnt ends in the half pan to the smoker for 15 minutes to allow the glaze to set.
Remove from the smoker and serve.
