In a small bowl, combine the paprika, brown sugar, salt, garlic, cayenne, onion white pepper, black pepper, and celery seeds.
Ribs
Trim the pork ribs as required including removing the membrane. Apply the rub and leave to rest while setting up the smoker.
Preheat the smoker to 250 degrees F (120 degrees C) and add the chunk of hickory.
Place the ribs on the prepared smoker and cook for 1 hour, or until you are happy with the color.
Layout a sheet of foil. Place the butter on it then top with the ribs. Wrap the foil tightly around the ribs.
Return the wrapped ribs to the smoker and continue to cook for 1 hour or until tender. Check for tenderness between the bones with a probe.
Remove the ribs from the foil and let them rest. Gently remove the bones from the meat.
Pickled Onions and Cucumbers
Combine the onions, cucumbers, red pepper flakes, and vinegar. Leave to rest so the flavors infuse with each other.
Pork Roll
Slice the buns in half then toast until crispy brown.
Layer with the sliced pickles and pulled rib pork then top with the pickled onions and cucumbers. Drizzle with the BBQ sauce then close the sandwich, with the top half of the toasted roll. Serve immediately.
Tip
Prepare the pickled onions and cucumbers while the ribs are cooking.
