Prepare the beef by removing any excessive fat and sinue. Cut into even bite-sized pieces.
Peel and cut all the vegetables into even bite-sized pieces.
Place the vegetables and meat into a Dutch oven, using a Dutch oven liner if desired.
Sprinkle the yellow curry powder, salt, and pepper over the top.
Drizzle the cream over all the ingredients, then lightly stir.Tip: Coconut milk can be used as an alternative, as it is much easier to carry and store in the outdoors.
Place the Dutch oven lid on to cook.Tip: A correctly seated lid on a Dutch oven ensures that none of the fluids escape, creating the moisture and gravy for the curry. If your lid does not seal or you see steam escaping, water may need to be added to keep it moist.
Heat the Dutch oven to 350 degrees F (180 degrees C). When the temperature is reached, cook for 45 minutes.Tip: Depending on the type of stewing meat used, this may take longer to get the meat tender.
When cooked, stir and taste. Adjust the flavour with more curry powder, salt, pepper, or cream. Serve hot alone or with your favorite curry accompaniment, such as rice or flatbread.
