Remove the rind from the pineapple and cut half the flesh into slices.
Place a liner in a Dutch oven, then evenly lay the pineapple slices across the bottom.Tip: Using a liner is recommended when cooking with highly acidic ingredients such as pineapple.
Evenly sprinkle the rub all over the piece of pork.
Place the pork on top of the pineapple. Add the small amount of water to help the pineapple not stick or burn at the beginning of cooking, then roast for 2 to 2 1/2 hours.
Check that the pork is cooked to your preferred doneness. To slice it is a shorter cook time than to pull.
Remove the pork and rest while you cut the pineapple into smaller pieces. Then slice or pull the pork. Serve as desired.
