Directions
Heat the oil in a large cast-iron skillet over medium-high heat.
Add the potatoes to the skillet and cook until just starting to brown, about 10 minutes, stirring occasionally.
Add the bacon and onions to the skillet. Continue to cook until the bacon renders its fat and the onions soften, about 10 minutes. Stir occasionally.
Stir in the garlic and Old Bay seasoning and cook until the garlic is fragrant, about 2 minutes. Season to taste with salt and pepper.
Serve while still hot.
