This is a grilled ham and pineapple pizza, which is sometimes referred to as a ‘Hawaiian pizza’. It is both sweet and savory and it is better than anything you can achieve in your home oven.
Preheat a closed BBQ or smoker to its highest temperature of 600 degrees F (315 degrees C) with the pizza stone inside.
Pizza Sauce
In a small bowl add the tomato sauce, diced onion, garlic, and Italian herbs then stir until well combined.
Making the Pizza
Sprinkle the corn grits on a large chopping board or tray. Place the dough already shaped into a large thin disk on top.
Cover the pizza dough with a layer of homemade pizza sauce. Sprinkle 1/3 of the cheese over the base, then add the ham and pineapple. Top with the remaining cheese. Sprinkle with the herb rub.
Slide the pizza onto the preheated pizza stone in the preheated BBQ.
Bake until the dough is cooked through and the cheese is melted, 10 minutes to 15 minutes depending on the heat of your BBQ. Serve immediately.
