Directions
Preheat the oven to 350 degrees F (180 degrees C). Line the baking tray(s) with baking paper.
In a bowl combine the flour, baking powder, and baking soda. Put aside until needed.
In a large bowl beat the butter, white sugar, and brown sugar with a wooden spoon until light-colored and fluffy.
Add the egg and vanilla and continue to beat until well combined.
Add the flour and mix in until just combined then stir in 1/2 cup of candy-coated chocolates.
Make balls out of about 1 tablespoon of dough and evenly space them on the tray(s) making sure there is enough space for the cookies to spread. Push the ball down slightly with the palm of your hand then add some of the saved 1/2 cup candy-coated chocolates on the top.
Bake the cookies for 12 minutes. Remember that if cooking in an outdoor oven the elements can adjust the cooking time due to temperature fluctuations.
The cookies are done when they are firm on the outer edges, yet still soft in the middle.Tip: If you prefer an English crunchy-style Christmas biscuit, cook until the center is firm.
Remove the cookies from the baking tray(s) and place them on a cooling rack.
