Bring the chicken stock and herb seasoning to a boil.
Add the rice and simmer for 10 minutes or until cooked through.
Drain the rice in a sieve and put it aside until needed.
Smoked Sausage and Black Bean Rice
Slice the smoked sausages into thin rounds then add to the pot over moderate heat. Cook to brown and release the oils, if there are no oils in the sausage add a knob of butter or dash of oil.
Add the onions, bell peppers, celery, and garlic to the sausage and cook until the onions are transparent.
Stir in the cooked rice and drained black beans, then cook until heated through, but not sticking or browning. Taste and adjust the flavors with salt, pepper, and/or herb seasoning. Serve hot.
