Preheat the oven or grill to 375 degrees F (190 degrees C).
In a large skillet, heat the oil over medium heat.
Season the chicken with salt and pepper. Add the chicken and cook until browned, about 10 minutes, turning halfway through.
Remove the chicken from the skillet to a 9 x 13-inch (21- x 35cm) baking dish.
Scatter the bell peppers, onions, olives, and garlic around the chicken.
In a large bowl, combine the wine, diced tomatoes, crushed tomatoes, and Italian seasoning. Season to taste with salt and pepper. Pour the mixture over the chicken.
Bake until the chicken reaches an internal temperature of 165 degrees F (75 degrees C), about 35 minutes.
