Purple Cabbage Preparation

Directions
Yogurt Dill Sauce
Half the cucumber and remove the seeds then finely grate.
In a bowl combine the yogurt, salt, lemon juice, fresh dill, and garlic. Stir to combine well.
Stir through the grated cucumber then chill untill needed.
Pickling Brine
Boil the water then add the cider vinegar, sugar, garlic, red chili flakes, and all-purpose rub. Stir until dissolved and turn off the heat.
Purple Cabbage Preparation
Remove any damaged outer leaves of the purple cabbage then cut into 6 even wedges.
In a large bowl add the purple cabbage wedges then pour over the hot pickling brine. Let sit for at least 30 minutes. Remove and drain.
Preheat a grill to a hot temperature.
Brush a little vegetable oil on each segment then grill on the prepared hot grill until there is a little char on each surface.
To Serve
Place the cabbage wedge on a serving plate then spoon-drizzle the yogurt dill sauce on top. Garnish with additional fresh dill.
