Peel the fresh pineapple with a knife to remove the top layer, this will leave eye-like imperfections. Use the knife to wedge these out, following it around will create a spiral look. Leave the leafs on the top if desired to create a natural look.
Maple Bourbon Glaze
In a pot gently melt the butter.
Add to the butter the brown sugar, maple syrup, and bourbon. Continue to stir until the brown sugar is fully dissolved. Put aside until needed.
To Cook
Prepare the pineapple on the spit then place over hot charocoal Turn on to rotate and basted with the maple bourbon glaze..
Continue to glaze every 10 minutes until the desired color and temperature are reached, it is not necessary to cook the pineapple.
Let the pineapple cool before slicing and serving.
