Preheat the smoker to 300 degrees F (150 degrees C).
Cut off the stem of the jalapeno peppers and sweet peppers then make a slit 3/4 ways down one side and gently remove any seeds. Tip: If you like your poppers spicy, leave the seeds inside of the jalapeno.
Mix the softened cream cheese, grated cheddar, and crumbled bacon in a bowl. Add some Slap Yo’ Daddy Hot Rub, to taste.
Stuff the prepared peppers with the cheese mix.
Option 1 – Using a popper rack, place the prepared peppers in it to cook.Option 2 - Wrap the pepper with a bacon strip and secure it with a toothpick. These are then cooked directly on a grill rack.
Place the prepared popper in the preheated smoker and cook until they are softened and the cheese has melted; about 30 minutes.
Remove and dust the cooked jalapeño poppers with some Slap Yo’ Daddy Hot Rub and serve immediately.
