Directions
In the pot or Dutch oven, fry the bacon until cooked and starting to crisp. Remove about a quarter to garnish.
Add the onions and lightly fry in the bacon fat.
Add the wine to remove any bits that may be sticking to the bottom of the pot or Dutch oven.
Add the potatoes and chicken stock to the bacon and onions, then simmer until the potatoes are cooked through and start to fall apart.
Using a potato masher, puree the potato soup as much as possible.
Add the creamed corn then bring back to a boil to heat through.
Serve garnished with the reserved bacon.
