your favorite BBQ sauce

6 bamboo skewers

Directions
Soak the bamboo skewers in water while you prepare the meat.
Cut the meat into chunks and toss with the spice rub. Thread onto the skewers and set aside to let the meat come to room temperature before grilling.
Heat a grill to high heat.
Add the skewers, then reduce the heat to medium-high. Alternatively, sear the meat then move off the fire to finish cooking with indirect heat.
Cook the meat until it reaches an internal temperature of 165 degrees F (75 degrees C), about 15 minutes.
Add BBQ sauce a few minutes before they are done cooking.
