Place a piece of peach wood in a disposable pan poked with holes, place over a gas burner and wait until the wood starts to smoke. Reduce the heat and leave for 30 minutes.Alternatively: Spread the pecans on a plank and smoke in a smoker for 30 minutes.
Mustard Dressing
In a small bowl, combine the vinegar, lemon juice, sugar, mustard, and oil.
Mint Salad
In a large bowl mix together the mint, red onions, orange segments and rocket.
To Assemble
Dress the salad with the vinaigrette, top with the smoked pecans and feta. Serve immediately.
