Chop as finely as possible the chilies, garlic, and coriander.
Place the chopped items in a bowl along with the lemon juice, olive oil, salt, and pepper. Alternatively, place all the ingredients in a blender and pulse until well combined and smooth.
Cover and chill until needed.
Piri Piri Chicken
Cut the chicken into 1 inch (2cm) pieces and combine with 3 to 4 tablespoons of the peri peri sauce, then cover and chill to marinate for 1 hour.
Preheat a grill (best results if charcoal) to medium-high heat.
Place about 6 chicken pieces onto each of the 6 skewers neatly then set aside until required.
Cook the Piri Piri chicken skewers on the preheated grill turning and lightly basting until fully cooked but moist. About 12 minutes.
Present the skewers with a little coriander, lemon wedges, semi-dried cherry tomatoes, and a side dish of remaining Piri Piri sauce.
