We all love a good chicken wing and this is one of the best! The wings are first smoked, then coated with a sweet chili sauce, before finally being grilled.
Preheat the smoker to 225 degrees F (105 degrees C), and add a chunk of hickory.
Cut the full wing into sections if desired. These are sometimes referred to as 'party wings'.
Lightly season the chicken wings with the herb rub.
In a disposable pan, melt the butter then add the chicken wings in a single layer.
Place the chicken wings in the preheated smoker and cook for 1 hour, turning halfway through.
Grilling
Preheat a grill and GrillGrates to a hot temperature of about 400 degrees F (205 degrees C).
After removing the chicken wings from the smoker transfer them to a bowl and drizzle with the sweet chili sauce and any additional sauce for heat if desired.
Mix well until all the chicken wings are well coated.
Place the chicken wings on the preheated GrillGrates then cook until grill marks form and the sauce sets. Turn to do the same on the other side. If you prefer a thicker glaze the saucing can be repeated.
